simple guidelines that will help you get the most satisfaction from every delicious bite of Smoky
Market foods:

Allow all Smoky Market foods to thaw naturally in your refrigerator before use; never use when
frozen. Please do not use a microwave to thaw or heat our foods. It will deplete moisture and flavor.

Remember that all Smoky Market foods are already fully cooked, so follow instructions and heat
gently! Overheating will dry foods out and diminish their smoky flavor.

When using our Smoke-Baked fish or meat in your own recipes, please add it in the last two
minutes of cooking, just prior to serving.

Your Smoke-Baked fish or meat will arrive at your home in a vacuum-sealed package for
optimum freshness. After opening, please enjoy within three days.
SMOKY MARKET ATLANTIC SALMON FILLET is delicious served at room temperature. Create
an elegant appetizer plate, or make it the centerpiece of a beautiful luncheon salad. For a main
course, simply place fillet on cookie sheet, baste with your favorite sauce (lemon dill is great!) and
bake at 300 degrees for up to 13 minutes - not a minute longer!

favorite salads and wraps. It’s also great in everything from breakfast scrambles and quesadillas
to creative stir-fry recipes made with fresh-chopped vegetables and tasty sauces. (You can always

Serves 6 12 large eggs ¾ cup cream or milk 1 tsp. salt 2 tbsp. olive oil 2 ¼ leeks, thinly sliced (about 1 ½ leeks) 1 tbsp. olive oil 2, 6 oz. packs of Smoky Market Flaked Salmon 1 tbsp. fresh chives, finely chopped
Whisk together eggs, cream and salt in a large bowl.
Heat 2 tbsp. olive oil in a large nonstick skillet over medium heat and sauté leeks until soft, stirring occasionally. Add the other 1 tbsp. olive oil and increase heat. Pour in eggs and scramble until nearly set, then add Smoky Market Flaked Salmon. Spoon onto plates and sprinkle with chopped chives. Top with a dollop of sour cream and lemon zest if desired.

Makes 12 Burritos 6 eggs, beaten 1 tbsp. olive oil 2 tbsp. chopped onion ¼ cup diced red, yellow and green peppers 1, 6 oz. jar salsa 2, 6 oz. packs of Smoky Market Flaked Salmon 8 oz. shredded Monterey Jack or Colby cheese 6 flour tortillas
Sauté onions and peppers in oil until soft, then add eggs and stir frequently. When eggs start to set, stir in salsa and shredded cheese. Meanwhile, warm tortillas in oven or microwave. Just before serving, add Smoky Market Flaked Salmon to eggs. Spoon ¼ cup of egg mixture to each tortilla, roll up and serve!

Serves 2 2 fresh or frozen bagels, lightly toasted Whipped cream cheese Smoky Market Salmon flakes Sliced fresh tomato, red onion & capers to taste
Toast bagels, spread with cream cheese, top with flaked Smoky Market Salmon, sliced vegetables and capers as desired. Add squeeze of fresh lemon if you like.

Serves 6 8 oz. Smoky Market Flaked Salmon 2 shallot cloves finely minced Juice of one lemon 4 tbsp. capers 4 tbsp. sour cream 1 tbsp. olive oil ¼ cup chopped fresh dill Fresh ground black pepper
Stir all ingredients except salmon to make a sauce, then fold in Smoky Market Flaked Salmon. Serve with crackers or in endive “boats” for an elegant appetizer that pairs perfectly with Champagne

Serves 4 6 oz. Smoky Market Flaked Salmon 1 large orange 1 large tomato, diced 2 scallions, thinly sliced 2 tbsp. chopped fresh basil 1 tbsp. olive oil ½ tsp. fresh ground black pepper ¼ tsp. salt 8 Kirby or Persian cucumbers, peeled, halved lengthwise and seeded 1 ¼ cups low-fat sour cream 4 slices dark rye bread or whole wheat pita bread
Zest orange over a bowl, then cut away rind and break into sections, removing membrane and catching juices and sections into bowl. Mix in flaked Smoky Market Salmon, tomato, scallions, basil, oil, salt and pepper. Divide mixture among cucumber boats and top each with 1 ½ tbsp. sour cream. Serve with bread for a great snack!

Serves 4 4 oz. Smoky Market Flaked Salmon 12 crackers or pita chips 1/3 cup low-fat cream cheese 1 tbsp. fresh lemon juice 1 tbsp. + 1 ½ tsp. minced lemon zest 1 tbsp. + 1 ½ tsp. capers One handful chopped arugula or other greens
Mix cream cheese with lemon juice and zest, then season with salt and pepper. Put a small spoonful of the mixture on each cracker or pita chip, then top with Smoky Market Salmon and capers. Arrange on a platter and garnish with chopped greens.

|
Serves 4 One bag fresh baby spinach 6 oz. to 8 oz. Smoky Market Flaked Salmon 1 fresh tomato, diced ½ cucumber, peeled, seeded & sliced 4 pieces bacon, cooked and cooled ¼ raisins (or more to taste)
Place spinach in salad bowl and arrange other ingredients on top, then toss with your favorite Asian dressing and serve.

Serves 4 6 oz. to 8 oz. Smoky Market Flaked Salmon 1 cup shredded Monterey Jack or cheddar cheese 1 red or green pepper, seeded and thinly sliced Other fresh veggies as desired: fresh avocado, red onion, etc. Salsa, fresh chopped cilantro and sour cream 4 -our tortillas
Warm tortillas on both sides on a griddle or in a pan then sprinkle cheese on each. Add veggies and salmon, then fold tortillas in half and heat for up to two minutes, just until cheese melts. Remove from heat and top with salsa, cilantro and a dollop of low-fat sour cream if you like.

Serves 4 One box Mac & Cheese 1 cup cooked veggies: broccoli, squash, asparagus or carrots 1, 6 oz. pack Smoky Market Flaked Salmon
Prepare Mac & Cheese according to directions then stir in veggies. Just before serving, stir in Smoky Market Flaked Salmon and serve

SUPPER TIME
|
Serves 4 to 6 1 lb. fresh asparagus 2 large shallots, finely minced 2 lemons 4 oz. Smoky Market Flaked Salmon 1 lb. dried pappardelle or fettuccine 3 tablespoons unsalted butter 3/4 cup heavy cream About 4 tbsp. chopped fresh dill or to taste Snap ends off asparagus and slice diagonally into 2”pieces. Steam and drain while it is still bright green and set aside. Melt butter in a large pan and sauté minced shallots over medium heat until soft. Add zest of two lemons and stir gently. Slowly add heavy cream,stirring with a wooden spoon until it starts to thicken.Drizzle in fresh squeezed juice of both lemons, stirring constantly. Season with pepper and a little salt and turn off heat. Cook pasta in boiling salted water with a dash of olive oil, then drain well. Add pasta to cream sauce and toss gently. Stir in asparagus, Smoky Market Flaked Salmon and chopped dill. Top with a sprinkling of dill and serve.

Serves 2 2 Smoky Market Salmon Fillets, 6 oz. each 2 tbsp. butter 1 tbsp. honey 3 tbsp. Dijon mustard
Preheat oven to 300 degrees. In a small pan, melt butter with honey and mustard over low heat, stirring to create a thick syrup. Place Smoky Market Salmon Fillet on a baking pan and spread glaze mixture over top and sides. Bake for 13 minutes

serves 2 2 Smoky Market Salmon Fillets, 6 oz. each 2 tsp. fresh garlic, minced 1 cup low-fat sour cream 1/3 cup fresh chopped dill 2 tbsp. onion, finely minced 2 tbsp. Dijon mustard
In a small bowl, whisk together sour cream, dill, onion and mustard. Season to taste with salt and pepper and let stand at room temperature for 1 hour. Preheat oven to 300 degrees. Place Smoky Market Salmon Fillet on a baking sheet, sprinkle with minced garlic and spread with 1/3 cup of sauce. Bake 13 minutes and serve with remaining sauce on the side.

Serves 4 1 box of your favorite frozen or boxed Asian vegetable or noodle meal More of your favorite fresh or frozen vegetables, steamed or cooked Hot pepper flakes to taste 6 oz. sliced Smoky Market Flaked Salmon Crunchy noodles or toasted sesame seeds Fresh chopped cilantro
Prepare frozen meal as directed and add cooked vegetables and seasonings to taste. Just before serving, stir in Smoky Market Salmon. Garnish with crunchy noodles or sesame seeds and enjoy!

Prepare frozen meal as directed and add cooked vegetables and hot pepper flakes to taste. Just before serving stir in Smoky Market Salmon. Garnish with grated cheese and fresh basil and serve!
